Coming to the word, Wisdom, it has its roots to Wise-dom, and Wit. Going by its roots, wise-dom and wit is acquired over time with experience and knowledge. In a way, biting off more than a person can, is itself a learning experience that some have to go through to learn, provided the person wants to learn from that experience.
